For 4 people:
- 2 kg mussels
- 3 Tbsp olive oil
- 2 garlic cloves unpeeled and halved
- a few thyme sprigs
- 100 ml white wine
- 400 gr coconut milk
- 1 lemon grass stalk, halved lengthways
- 1 red chilli sliced or dry chilli flakes
- 2 green onions sliced
- sea salt and black pepper
- coriander leaves to finish
Heat olive oil in a big pot untill very hot and quickly toss in the mussels, garlic, thyme and wine. Cover and let steam for 3-4 minutes till they are all opened.
Drain over a bowl or a smaller pan to catch the liquid than boil down the liquid to half. Add the coconut milk, lemon grass, chilli, onions, and seasoning. Bring to a simmer and let bubble for 2 minutes.
Add the mussels ( without the garlic and any unopened mussels) and garnish with coriander leaves.
