Cindy's chicken fajitas

Serves 4
  • 4 chicken breasts boned and skinned
  • 1/2 a red and yellow pepper seeded en cut in fine julienne
  • 1/2 on onion cut in slices
  • 8-12 flour tortilla
  • sour cream
  • grated cheddar
  • Guacamole

For the marinade:

  • 1 Cup vegetable oil
  • 1 Cup lime juice
  • 1 Cup soya sauce
  • a dash of cumin powder (optional)

Mix all ingrdients of the marinade and marinate the chicken in the refrigerator for an hour or so.

Drain well and broil the chicken till cooked but do not overcook it.

While the chicken is cooking put the marinade and the vegetables in a frying pan and cook till the liquid is reduced and syrupy.

Tear the chicken and add it to the vegetables together with the juice of the broiled chicken.

Serve with tortilla, sour cream, cheese and guacamole.
Add chopped green onion and/ or fresh coriander.
