- 1 large handful of mixed mint,dill,basil and sage (or dry mint and dill)
- olive oil
- 4 fillets of John Dory or similar white fish
- 1 garlic clove, finely sliced
- salt and pepper
- 50 ml fish or vegetable stock
- 70 ml lemon juice
- 70 ml orange juice
- 1 small handful of pink and green peppercorns
Drizzle a good glug of olive oil in a shallow panfor which you have a lid.Lay the fish skin side down and add the garlic and salt and pepper. Scatter the herbs over and place onto medium heat. When it starts to sizzle, add the stock and juices and put the lid on.After no more than 4 minutes, remove the fish and keep warm. Turn up the heat, add the peppercorns and cook untill reduced to syrupy.. Pour over the fish and serve.
