Salmon Provençal

for 4 people:
  • 4 skinned salmon fillets
  • 1 T fennel seeds
  • 1 T minced fresh rosemary
  • 1 T orange zest
  • olive oil  
Season fillets on both sides with salt and pepper. Grind fennel seeds in a coffee or spice grinder. Mix with rosemary and orange zest.Press this mixture onto the top of each fillet.
Preheat the oven to 400 F
Preheat a non stick pan skillet over medium high heat. add the oil and cook coated side down for 1 minute.Turn and cook for another minute.Transfer to the oven and cook 4 minutes for rare,5 to 6 minutes for medium rare and 8 minutes for well done.
Of course it all depends on the thickness of the fish
For thin pieces I skip the oven part
