Seeded chicken schnitzel




 Ingredients:

4 x Skinless chicken breast (chopped into strips),

50g Plain flour,

2 x Eggs (lightly beaten)

80g Panko crumbs

60g White sesame seeds

25g Black sesame seeds

40g Sunflower seeds

2 x tbsp coriander seeds

1 x tsp Ground turmeric

Half tsp Cayenne pepper

Sunflower oil to fry

1 x Lemon (quartered)

Salt & pepper to taste


Method:


In a clean bowl, add the flour, a little salt and pepper,

In another bowl add the beaten eggs,

In the third bowl add the panko, seeds, turmeric, cayenne and a little salt,

Dip each piece of chicken into the flour, then into the egg and finally into the seed mix, repeat for all the chicken,

In a large frying pan add enough oil to shallow fry the chicken and once hot start adding the chicken,

Cooking time will be between 5-6 minutes, however you are looking for a nice golden colour,

As each piece of chicken is cooked, lay out on some kitchen towel to soak up any excess oil,

When ready to serve, add a little squeeze of lemon.
