Roasted rack of lamb

 For 4 people:

1/2 Cup breadcrumbs 

2 T minced garlic

2 T chopped rosemary 

1 t salt

Black pepper

2 T olive oil

2 racks of lamb

1 T Dijon mustard


Combine first 6 ingredients 

Season lamb and sear in oil quickly 

After a few minutes spread mustard and roll in breadcrumbs 

Roast in 210 degree oven for 10 to 12 minutes depending on taste and size 

Let rest for 5 minutes
