Cold sauce for grilled fish

Combine:

  • 2 C peeled and chopped tomatoes (blanched)
  • 10 olives (both are fine, but black look better)
  • 1 C sliced shallots (cut very fine)
  • 2 C peeled and chopped cucumber
  • 2 soup-spoons of capers
  • a small amount of coriander
  • salt, pepper
  • 1 C olive oil

let stand for 30 minutes to allow the flavors to develop.
