- 8 thick slices of bacon cut in strips crosswise
- 1 large onion thinely sliced
- 1/4 Cup white wine
- 3 eggs lightly beaten
- 2/3 Cup parmesan
- 2 T chopped parseley
- 1/2 t salt
- ground pepper
- 1 lb spaghetti or linguine
- Parmesan cheese
In a skillet, lightly brown the bacon and onion. When brown pour off all but 1/2 Cup of the bacon fat is there is any. Add the wine and simmer for 15-20 minutes.
In a bowl combine the eggs, parmesan cheese, parseley salt and pepper.
Cook the pasta.
Toss the pasta with the egg mixture and then bacon mixture.
Serve with additional cheese.
