Grilled fish and vegetables

For this dish you can use salmon fillets or tuna steaks or halibut or swordfish.
If you use salmon fillets just cook them in the oven with salt and a bit of lemon at 220° C for 10 minutes.
For the vinaigrette:
  • 4 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • 1 clove garlic crushed
  • 2 Tbsp fresh basil chopped
  • salt and pepper

Mix all the ingrdients together and set aside.

For the vegetables:

  • 1 yellow, green and red pepper seeded and cut in 4 pieces
  • 250 gr new potatoes quartered lengthwise
  • 4 shallots
  • and any other vegetables that are in season like carrots, fennels etc.

Spread all the vegetables on a tray with a bit of olive oil and salt and bake in a 180° C oven for about 40 minutes or till they are tender and nicely roasted.

Just before they are done cook the fish.

Serve the fish surrounded with the vegetables and drizzle some vinaigrette over . Let your guests add more if they want.
