For lime garlic vinaigrette:
- 3 cloves garlic minced
- 1/2 Cup scallions minced
- 1/2 Cup lime juice
- 1/2 Cup diced red peppers
- 1 serrano or jalapeno pepper minced
- sea salt, ground pepper
- 3 Tbsp olive oil
For the Tacos:
- 1-1 and a half firm white fish filets such as snapper, cod,halibut or sole
- salt and pepper
- 1 Tbsp olive oil
- small flour tortilla
- 1/2 head of green or chinese cabbage shredded very thin
- cilantro
- Monterey Jack grated ( optional)
Whisk all vinaigrette ingredients together except for the oil. Add the oil gradually and whisk till it has emulsified. Set aside.
Season the fish and grill on a barbeque or under the broiler or in a frying pan.
Heat the tortillas.
Sprinkle pieces of fish onto a warm tortilla, top with shredded cabbage, some vinaigrette and garnish with sour cream, cheese and cilantro
