Grilled fish tacos with lime garlic vinaigrette

For lime garlic vinaigrette:

  • 3 cloves garlic minced
  • 1/2 Cup scallions minced
  • 1/2 Cup lime juice
  • 1/2 Cup diced red peppers
  • 1 serrano or jalapeno pepper minced
  • sea salt, ground pepper
  • 3 Tbsp olive oil

For the Tacos:

  • 1-1 and a half firm white fish filets such as snapper, cod,halibut or sole
  • salt and pepper
  • 1 Tbsp olive oil
  • small flour tortilla
  • 1/2 head of green or chinese cabbage shredded very thin
  • cilantro
  • Monterey Jack grated ( optional)

Whisk all vinaigrette ingredients together except for the oil. Add the oil gradually and whisk till it has emulsified. Set aside.

Season the fish and grill on a barbeque or under the broiler or in a frying pan.

Heat the tortillas.

Sprinkle pieces of fish onto a warm tortilla, top with shredded cabbage, some vinaigrette and garnish with sour cream, cheese and cilantro
