- 1/2 very ripe pineapple and mango, peeled and coarsely chopped
- 1/2 each red and yellow peppers chopped
- 1 small jicama peeled and chopped
- 2 tsp ginger grated
- 1 clove garlic minced
- 1 serrano chilo or 2 dried chilis seeded and minced ( or chili flakes to taste)
- 1 Tbsp each of minced cilantro, basil and mint
- 1 Tbsp sweetened rice vinegar
- 1 Tbsp each soya sauce and sesame oil
- juice of 1 lime and salt to taste.
Combine all the ingredients and refrigerate for a while .
