Pineapple - red chili salsa

Great served fish grilled fish

  • 1/2 very ripe pineapple and mango, peeled and coarsely chopped
  • 1/2 each red and yellow peppers chopped
  • 1 small jicama peeled and chopped
  • 2 tsp ginger grated
  • 1 clove garlic minced
  • 1 serrano chilo or 2 dried chilis seeded and minced ( or chili flakes to taste)
  • 1 Tbsp each of minced cilantro, basil and mint
  • 1 Tbsp sweetened rice vinegar
  • 1 Tbsp each soya sauce and sesame oil
  • juice of 1 lime and salt to taste.

Combine all the ingredients and refrigerate for a while .
