Really lethal pecan pie

  • 9 inch pie shell
  • 1 and 1/4 Cup corn syrup
  • 1 Cup light brown sugar
  • 4 Tbsp butter
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 and 1/2 Cup pecan broken coarsely
Put the corn syrup and the sugar in a saucepan and stir over moderate heat till sugar is dissolved. Let it boil for 2-3 minutes. Remove from heat and stir in the butter.
In a bowl beat the eggs and continue beating while adding the syrup.
Stir in the vanilla and the pecans. Pour in the pie shell and bake at 180° C (350°F) for 45.50 minutes or until set.
You may have to cover with foil to prevent browning to much.
