Lime Cheesecake


  • 175 gr. digestives or speculoos cookies
  • 75 gr. butter melted
  • grated zest and juice of 1/2 a lemon
  • grated zest and juice of 3 limes
  • 115 gr. sugar
  • 350 gr.regular cream cheese
  • 150 ml double cream
Crush the cookies and mix with melted butter cooled. Press in the bottom of a 20 cm loose-based flan tin.
Mix the cream cheese with sugar and lemon and lime in a food processor.
Whisk the cream till soft peaks form and fold into the cream cheese mixture.
Pour in the in and chill overnight. Serve with rasberries
