Best Healthy Banana Bread

Pretty healthy because Julie modified it to use less oil and sugar and more bananas and yogurt.

Preheat the oven to 350°F / 165°C (hot air oven)
4 eggs
2 C sugar (+ 1 packet sucre vanillé if not using liquid vanilla)

3 1/4 C flour
2 t baking soda
1/2 t salt
1/2 t cinnamon

1 1/4 C oil (sunflower)
3 1/2 C very ripe bananas, coarsely mashed (approximately 7 bananas)
1/2 C plain yogurt (unsweetened) or crème fraîche
2 t vanilla extract (if not using sucre vanillé)
(optionally, add some chocolate chips)

Method:

1. Put the eggs, sugar and sucre vanillé (if using) in the mixer and let that mix up to 10 minutes - or until white and creamy.
2. In a very large separate bowl mix the flour, baking soda, salt and cinnamon and set aside.
3. On a chopping board mash up the bananas with a fork. Leave some bigger chunks.
4. Slowly mix the mashed bananas into the wet ingredients, adding also the oil, yogurt (and vanilla if using liquid vanilla).
5. Pour the wet ingredients into the bowl with the dry ingredients and fold together.
(optional: stir in some chocolate chips or chopped nuts)
6. Grease 3 small or 2 large loaf pans and bake for 40-55 minutes depending on the size of the pans.

Check to make sure you don't overbake!
