Baked chicken Primavera

For 4 people:

  • 4 chicken breasts
  • 2 T olive oil
  • salt &pepper
  • 1 t italian seasoning
  • 1 zucchini thinly sliced in half moon
  • Tomatoes sliced and halved
  • 1 yellow pepper sliced
  • Half a red onion thinly sliced
  • Shredded mozzarella
Preheat oven to 180.
Make 5 slits in each breasts.salt and pepper.olive oil and seasoning.
stuff with one of each ingredient and cover with mozzarella.
Cook for 20 minutes till chicken is done.
Serve with the rest of the veggies sauteed and add capers and olives
