Tzatziki



  • half a large cucumber
  • 1 clove garlic
  • 2 T olive oil
  • 500gr greek yogourt
  • small bunch of dill
  • some mint
  • lemon juice to taste
  • 1 t of dry mint
Peel and slice the cucumber half way and remove the seeds. 
Grate it and put it in a sieve with some sea salt and let it drain for a a few hours tossing occasionally.
combine crush garlic with the oil and let it sit so it mellows out the pungency.

when cucumber is ready pat dry on kitchen towel and mix with chopped herbs and the rest. salt as needed
