Filet of cod with orange Swiss chard


INGREDIENTS


4 servings

Four 6-ounce cod fillets

Salt and freshly ground black pepper

1 cup all-purpose flour

½ teaspoon cayenne pepper

extra-virgin olive oil

zest of one orange cut into wide strip plus juice

2 bunches of chopped Swiss chard hard white stems removed


In a large skillet heat oil. Add swiss chard and orange zest. Cook, tossing frequently till it wilts. You may have to cover if there are lots of white parts.Add orange juice season with salt and pepper.

While this is cooking, season each cod fillet on both sides with salt and pepper. Put the flour in a large bowl and stir in the cayenne pepper. Dredge each piece of cod thoroughly in the flour.

In a large sauté pan, heat the olive oil over medium heat. Add the cod and pan-fry until browned and fully cooked, about 3 to 4 minutes on each side.

Serve the fish over the swiss chard
