in a food processor finely chop:
- 1 garlic clove
- 1.5 Cup flat leaves parsley leaves and thin stems
- 1/2 cilantro leaves ans thin stems
- 1/2 Cup mint leaves
- 2 T capers rinsed and draines
Transfer to a bowl and stir 2 T lemon juice 1/4 t salt and ground pepper. Add 1/2 Cup olive oil whisking constantly or shaking. Adjust seasoning and chill for at least an hour
