For 4 people:
- 2 pinches of fleur de sel
- minced fresh rosemary
- 3 garlic cloves, minced
- 2 tsp Dijon mustard
- 1tsp Balsamic vinegar
- 2 racks of lamb
Place the lamb in a roasting pan with the ribs curving down and coat the tops with the mustard mixture. Allow to sit at room temperature for an hour.
Preheat the oven to 450 ° F.
Roast the lamb for appr.10 minutes for rare, or 15 min. for medium rare.Remove from the oven and cover with foil and let rest for 10 minutes before cutting and serving.
