New BEST brownies

This recipe is adapted from the one in Jamie Oliver's latest book, 30-minute meals. It is a great cookbook! I am making these with slightly different instructions, and without the ginger and dried cherries he uses.

  • 200gr. dark chocolate (60% minimum - 70% is probably best)
  • 250gr. butter
  • 200gr. sugar (finely ground - get caster sugar if you are in the UK)
  • 6 T cocoa powder (unsweetened)
  • 4 heaped T self rising flour -or- 4 T flour + ~1 tsp. baking powder
  • pinch of salt
  • 4 eggs
  • optional: a handful of pecans
Preheat the oven to 180°C or 375°F.
Now, everything in this recipe goes in the food processor - easy!
Start by blitzing the chocolate and butter - if the butter is too cold, microwave it for 20 seconds to soften it up (I put the whole food processor bowl in the microwave).
Then add the sugar, cocoa and flour + a pinch of salt and blend.
Finally, while it is still spinning, crack in the eggs.

Spread the mixture 2.5cm thick in a greased pan that is 32x36cm and sprinkle the pecans on top.
Bake for 12-14 minutes. Don't overbake.

Resist eating them all until the next day - they get better overnight!
