Greek sheet pan chicken

serves 4:


  • 4 chicken breasts
  • 1/4 Cup olive oil
  • juice of 1 lemon + 1 lemon sliced
  • 2 T balsamic vinegar
  • 1 T chopped dill
  • 1 T chopped fresh oregano
  • 1 T paprika
  • 1 clove garlic minced
  • salt and pepper
  • 1 lb potatoes peeled and cut into chunks
  • 2 red bell pepper sliced
  • 1 onion sliced
  • 8 ounces feta cubed
  • 1/2 cup sun dried tomatoes
  • 1/3 cup kalamata olives pitted
  • tzatziki for serving
Preheat oven to 230 °C

on a baking sheet combine chicken,2 T olive oil, lemon juice,balsamic,dill,oregano,paprika,garlic,salt and pepper.Toss and remove chicken.
Add potatoes  onion and peppers and toss with 2 more T of olive oil and salt and pepper.Add lemon slices and bake for 40 minutes tossing halfway till veggies are cooked.
Meanwhile saute the chicken lightly and add it to the pan for the last 10 minutes.

Combine feta, sun dried tomatoes chopped and oil and olives in a bowl.

when cooked top it with the feta mixture and serve with tzatziki
